Once, while purchasing old sweet PX wines to refresh their own soleras, he realized that their provider had dismantled the PX solera in order to sell the empty butts separately. Fortunately, inside these there was still some very old and (necessarily) extremely dense PX, almost muddy at the bottom of each butt. Jan insisted that this be part of the deal. Since then he has preserved those butts under his vigilance.\u003c\/p\u003e\u003cp\u003eWe are, therefore, contemplating a wine that is different from the old PX from RFC bottled almost three years ago as number 36 in the La Bota series. This PX has a somewhat Montilla style, originally low in alcohol (around 12.5% alc.) that needed retouching to reach the minimum legal requirement of 15% ?which is why it has additionally benefited from the extra age needed in terms of integration and rest. The wine, very dense and concentrated, is now spectacularly delicious. We fell in love with one specific butt and so chose this one for bottling as number 56, in this case a single cask edition and necessarily a limited release. From the upper, limestone plateau and always a bigger, richer wine than its neighbors (Canon, Beau-S?jour B?cot), it still shows incredible minerality and limestone character in its deep black cherry, currant, and mulberry fruits as well as scorched earth, chalky minerality, roasted herb, licorice, and white flower-like aromas and flavors. Rich, full-bodied, concentrated, and structured on the palate, it's flawlessly balanced, has ripe, broad, building tannins, an expansive mouthfeel, and a great, great finish. It needs a decade of bottle age, but it?s truly brilliant stuff. Tannins are present but fine and gently grippy with detail and definition to them. This has a lot of life for the vintage, one of the more full, round wines with chewy, fleshy tannins. The Cabernet gives backbone and density, the Merlot ripe red fruits, and then the chalky, slate, pencil lead, graphite salinity of the terroir comes in on the finish, giving that nuance, the sense of place and the vintage. Great rise and persistence all the way through, such drive but also lift, it doesn't let up. A stand-out wine - extremely classy and memorable.
