The wine seems to layer that chalk’s seabed heritage into beautiful richness, as it combines different parcels aged in stainless steel, oak barrels or concrete. “It remind me of architecture,” Tina Vaughn of NYC’s The Simone said. “The smell of a building site—granite, concrete, steel beams. Three quarters of the vins clairs go through malolactic and the wine was disgorged in December of 2020. All of the fruit for this bottling hails from the estate’s parcels in Mesnil-sur-Oger, Cramant, Avize and Oger. The wine delivers a refined bouquet of pear, delicious apple, fresh-baked bread, a fine base of limestone minerality and a topnote of fresh almond. On the palate the wine is young, bright and full, with a superb core of fruit, excellent mineral drive and cut, pinpoint bubbles and a long, beautifully balanced and nascently complex finish. This is a young wine and really deserves at least a few years in the cellar to allow its acids to relax a bit more and the secondary layers of complexity to emerge. It should prove to be a long-lived bottle of non-vintage and will be hitting on all cylinders if given three to five years’ worth of bottle age- though it is certainly quite tasty in its youth. \u003c\/p\u003e\n\u003cp\u003e\u003cb\u003eJames Suckling-96\u003c\/b\u003e\u003c\/p\u003e\n\u003cp\u003eAromas of Italian croissant, cooked apple and tarte tatin. The Cuvée de Réserve is rarely this charming at this stage. The wine offers up a lovely nose of apple, pear, chalky soil tones, bread dough and a topnote of white lilies. On the palate the wine is crisp, full-bodied and focused, with a good core and soil undertow, elegant mousse and a long, complex and very nicely balanced finish. There are few champagnes in our portfolio I drink more of, and every time I do, Hugues’ Grand Cru Extra Brut reels me in, quiets me, and floors me. As Terry Theise wonderfully put it ‘Lots of wines, many of them good wines, let you taste the noise. The vins clairs are barrel-fermented for this cuvée and the cépages is sixty percent pinot noir and forty percent chardonnay. The current release is a blend of thirty-five percent 2013, thirty-five percent 2012, twenty percent 2011 and ten percent 2010 juice; the wine was given fully seven years aging sur latte prior to its disgorgement in January of 2022 and finished non-dosé. It offers a superb aromatic constellation of white peach, apple, hazelnut, a complex base of soil tones, brioche, smoke, dried flowers and a deft touch of buttery oak. The wine is from the excellent base year of 2012 and includes twenty-five percent reserve wines. It was disgorged in 2017 and finished with a dosage of ten grams per liter. The wine delivers a beautifully refined bouquet of pear, apple, brioche, chalky soil tones, a hint of almond and a topnote of spring flowers. On the palate the wine is bright, zesty and full-bodied, with a fine core of fruit, elegant mousse, excellent focus and grip and a long, dry and complex finish. While this was finished with ten grams per liter of dosage, it seems quite a bit drier, as this wine has plenty of good, young chardonnay acidity in its structural chassis and will age beautifully.
