This was distilled by Axel and William Krassel in September of 2021 on an 8 plate column still. It was put into an ex-bourbon cask and aged for 24 months in a humid environment. It was then bottled at cask strength with no additives. ABV: 55.8% \n\nNose: Vanilla, Green Apple, Peppery, touch of mushroom, earthiness \n\nPalate: Medium oily mouthfeel, Green Apple, Peppery, Mushrooms, Earthiness, Cinnamon\n\nFinish: Medium length finish, Green Apple, Mushrooms, Earthiness, Cinnamon, Dark Chocolate\n\nAnother great rum, these Alambiques really showcase a great depth of flavor and balance. They are a great demonstration of the ability of well managed oak to accent young aged cane juice rums. Aromas of toasty oak and coconut husk play with a significant overripe fruit element — quite tropical — that feels perfect for tiki. I was expecting a bit more of an aggressive quality to the nose, though, which otherwise comes across as fully focused on fruit. The palate again pops with that overripe fruit note, plus some secondary elements of nutty almonds, sesame seed, and a cream soda sweetness. A light floral character emerges later in the game on a body that is surprisingly gentle considering the slightly elevated abv.
