Crafted from 100% Assyrtiko sourced from 15 to 80-year-old ungrafted vines in Pyrgos, Santorini. Hand-harvested grapes are fermented with native yeasts and aged six months in stainless steel before being bottled unfiltered. Bright yellow with aromas of citrus, lemon, and white flowers, the wine offers a smooth, aromatic palate marked by pronounced minerality, vibrant acidity, and a long, fresh finish.
