The wines at Chantereves come from a place of genuine care and quiet obsession. Guillaume Bott and Tomoko are formally trained, but their approach feels more like instinct than science — whole clusters, wild yeasts, no shortcuts, no fuss. The whites are pressed gently, the reds are fermented with whole bunches and punched down by foot. Nothing is forced. The wines spend two winters in a cold cellar before bottling, aging in old oak that adds texture without fingerprints. What ends up in the bottle is exactly what the vineyard gave them.
