The Vogelsang is a steep and barren slope with reddish slate that does not yield much anyway. Especially since the water here evaporates quickly or, in the event of heavy rainfall, rushes down the slope, carrying soil with it. That is why the rows of vines in the Vogelsang are covered with greenery—it is primarily to protect against erosion but also to build up the all-important humus layer. During dry spells, the vegetation is kept short or rolled over so that the soil does not get too hot or dry out completely. The estate's grapes are always well ventilated due to their altitude and the topography of the Vogelsang, which is why botrytis is less likely to be expected here, in contrast to the Scharzhofberger, for example. Molitor aims for fully ripe, healthy grapes for both wines, including the Kabinett, whose grapes, however, develop less sugar because they grow in cooler conditions and ripen more slowly.
