The Adams’ 2021 Dhron Häs’chen Riesling Kabinett is a touch lower in octane than the Hofberg version this year, tipping the scales at an even eight percent alcohol. The wine offers up a lovely savory strain in its aromatic constellation of apple, wild yeasts, slate, dried flowers, bee pollen and gently “woodsy” tones that recall moss and fern. On the palate the wine is medium-bodied, complex and beautifully balanced, with lovely filigree, a touch more initial sweetness on the attack than the Hofberg, bright acids and a long, complex and seamlessly balanced finish. The 2021er Häs’chen Kabinett, as it is referred to on the consumer label, was made from fruit harvested at 77° Oechsle on 90-year-old un-grafted vines and was fermented in Fuder down to barely fruity-styled levels of residual sugar (36 g/l). An initial whiff of residual scents from its spontaneous fermentation gradually gives way to a great aromatic and refined elements of yellow peach, minty herbs, jasmine, lemon, and pear on the nose. The wine has a great light-weighted structured with sappy white and fresh fruits wrapped into ripe zesty acidity. The finish is pure, deliciously light, and more off-dry than fully fruity.
