The 2021 Vinha Centenária proved to be a fresher and sharper vintage, possibly the one with more aging potential. It has 13.01% alcohol, a pH of 3.25 and 7.18 grams of acidity. It is pungent and minerally, salty and tasty, with a very long finish. Seventy percent of this vintage fermented in horizontal stainless steel vats and the rest in used barriques with indigenous yeasts. The wine matured in those barriques for 15 months with lees but no bâtonnage.
