Billecart Salmon - Brut Rose Champagne 2015

This is a blend of 52% Chardonnay and 48% Pinot Noir that's been aged 100 months on the lees. The base wines come from a roll call of Champagne's best vineyard sites: Mesnil, Avize, Cramant, and Chouilly for the Chardonnay; Ambonnay, Mareuil, Verzenay, Ay, and Verzy for the Pinot Noirs. But the secret ingredient is the red wine that gives this cuvee its color, aroma, and rose character – all from an over 80-year-old plot of Pinot Noir called Vallofroy, immediately adjacent to Clos de Goisses, located on an impossibly steep south-facing slope on the banks of the Marne River.
