s I have mentioned in the past, the Vieilles Vignes bottling from François Servin hails from the superb lieu à dit of les Pargues, which was once ranked on the same level with many of the premier crus, but got left out when the AOC was adopted in Chablis. These vines are fifty-five years of age now and the wine is half barrel-fermented and half fermented in stainless steel. The 2023 version is gorgeous, offering up a vibrant and precise bouquet of lime, tart orange, flinty minerality, dried flowers and a touch of anise in the upper register. On the palate the wine is crisp, pure and full-bodied, with a superb core of old vine fruit, great mineral undertow and grip, impeccable balance and a long, complex and electric finish. This is clearly the quality equivalent of a top premier cru. Great juice and a superb value!
