Domaine Michel Noellat Bourgogne Pinot Noir comes from 1.44 hectares of 50-year-old vines planted in classic clay-limestone soils. After manual harvest, the grapes undergo cold maceration for 3-5 days before fermenting in stainless steel for 18 days, then aging 12 months in French oak. The result is honest Bourgogne Rouge that delivers classic Burgundian character – red fruit, earth, and distinctive minerality – without the inflated pricing that's made so much of the region inaccessible.
