Totus Tuus, Alberto Orte’s beautiful tribute to his mother, started with the 2007 harvest. In making Totus Tuus, Alberto sought to craft a fuller-bodied sparkling wine capable of ageing, in addition to showing greater complexity. The Latin expression Totus Tuus, means “everything for you” or “all yours”. Made at the historical Raventós Rossell estate, Totus Tuus uses a blend of the three traditional cava grapes with the addition of Chardonnay and Pinot Noir, aged on the lees for 20 months for a weighty, creamy expression of Cava.
This estate-bottled Cava is aged for 20 months on the lees prior to release, with marked Chardonnay creaminess balanced by bracing acidity. Full-bodied yet elegant, Totus Tuus is a benchmark for Cava Reserva in the Alt Penedès.
