Hanspeter Ziereisen's Schulen vineyard is limestone-rich (just like in Burg... don't mention the B word.) He farms organically and ferments spontaneously. His Pinot Noirs are strikingly mineral-laden, floral and meaty (just like in... don't mention it) and can rest in barrique for up to 20 months. Oh, and his winery is a former bomb shelter.
